Food trends 2010: What we’ll be eating next

THE NEWS: The marketing communications company JWT has released its list of 100 Things to Watch in 2010. Food things to pay attention to include: Bacon, Everywhere; Coconut Water; Composting; Energy Dieting; Exotic Berry Flavors; Fermentation (everything from mead to Greek yogurt and kombucha); Greening the American Palate; Organic Fast Food (like Boulder CO’s VG Burgers); Slow Beverages (versus energy shots); Stevia in foods and beverages; and Urban Fruit Gleaning.

WHAT IT MEANS: Everybody already knew that bacon and exotic berry flavors were hot – although not necessarily in the same dish. As for slow beverages, there have been some on the market for a long, long time. We call them beer, wine and cocktails. The urban gleaning movement is a bright, thoughtful idea – it should spread to the suburbs too. Homeowners keep planting these wonderful fruit trees in their backyards and then never bother to harvest the crop, whether it’s lemons or pie cherries. Such a waste, especially under the current economic conditions.
